1. Easter Peep Gingerbread House

For each Peeps house you will need:

  • 3 full graham crackers
  • Royal Icing
  • 1 Peep
  • M&Ms, sprinkles, or other desired candy for decorating

(Optional) Royal Icing Recipe: 

Ingredients:

  • 1 Large Egg White
  • 1 ½ Cups (6oz, 175 grams) of Powdered Sugar
  • ½ Lemon, juiced and strained.

Directions: 

  1. Combine the egg whites and powdered sugar in a medium-size mixing bowl and whip with an electric mixer on medium speed until opaque and shiny, about 5 minutes. Add the lemon juice and continue whipping until completely incorporated, about 3 minutes. The lemon juice whitens the royal icing. The royal icing should be light, fluffy, and slightly stiff. You may need to adjust the consistency by adding more egg whites if the icing is too dry or more powdered sugar if it is too wet.
  2. Pour royal icing into a piping bag, cut the tip and you are all set to start assembling the house.

Directions: 

 

  1. Start by breaking each of the 3 graham crackers in half. 
  2. Take one of the graham cracker halves and cut it in half again. Then cut  to create a triangle roof support. When cutting a graham cracker, slide the knife back and forth in a sawing motion. As long as you don’t push too hard you should get a nice clean cut.
  3. Pipe icing along the top edge of a graham cracker half, and then “glue” that graham cracker half to the bottom of the triangle you just cut. That makes the back wall of the house.
  4. Next, use two more graham cracker halves to form a roof. 
  5. Finally use the last two graham cracker halves to form the outside walls. At this point you want to let the icing harden for AT LEAST 15 minutes before moving on. Once everything is hardened, you can pick up the house and pipe icing along the bottom edges of the walls, then place it down on a paper plate.
  6. Now lets decorate! Use the royal icing and glue a peep inside the house Then you can use M&Ms, sprinkles, or any other candy to decorate the house.

Note: This recipe can be done with kids, just be sure you cut all the pieces before. It’s going to be messy! But totally worth it! My daughter and her friends had a blast making these!!

 

2. Rice Krispie Easter Nests

Ingredients:

Instructions:

  1. Melt the butter over medium heat and stir in the marshmallows. Continue stirring until completely melted. Pour the mixture over the rice krispies cereal and stir until well combined.
  2. Spray a muffin tin with cooking spray and shape the nests. I found it helpful to also spray a spoon and use it to help make the indents. You could do this by hand but it would be quite messy!

To fill:

  1. Let the rice krispies cool in the pan, pull them out, and decorate! I broke up the edible Easter grass, placed it in the next and filled the nest with the eggs.

 

3. Easter Puppy Chow

Ingredients:

  • 9 C. Chex cereal
  • 10 oz Wilton pink chocolate candy melts
  • 2 C. powdered sugar
  • 2 large gallon freezer bags
  • 1/2 C. pink, purple and light blue Sixlets

Instructions:

  1. Pour the candy melts into a glass microwavable safe dish. Heat in 30 second increments, stirring occasionally until melted. Let cool for a few minutes.
  2. Pour the melted chocolate over the Chex cereal and gently stir until all the cereal is coated with melted chocolate.
  3. Divide the 2 cups of powdered sugar between the 2 large freezer bags.
  4. Divide the chocolate coated cereal between the 2 bags, seal shut and gently shake each bag to coat the cereal with powdered sugar.
  5. Add in colored Sixlets.

 

4. Bunny Paw Print Cupcakes

Ingredients:

  • Boxed cake mix (and ingredients to make cupcakes, usually calls for water, oil, and eggs)
  • Vanilla frosting
  • Coconut flakes
  • Pink M&M’s
  • Pink candy melts

Directions:

  1. Preheat your oven to 350 degrees and line a couple cupcake pans with cupcake liners.
  2. Mix together your cupcake mix with your eggs, oil, and water.
  3. Fill your cupcake liners halfway with your cake batter, bake for 15 minutes, and let cool.
  4. Once your cupcakes have cooled you can fill a decorating bag with your vanilla frosting and cut the tip off the end.
  5. Frost each cupcake and dip the top of your cupcake into coconut flakes.
  6. Dab a small amount of frosting onto the back of one candy melt and 3 pink M&M’s and place onto the cupcakes to look like a bunny paw print as shown.

 

5. Mini Easter Bunny Banana Bread

Ingredients:

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 ripe bananas, mashed
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 6 tablespoons hot water

Instructions:

  1. Preheat oven to 350 degrees
  2. Grease pan with nonstick cooking spray and set aside.
  3. Add flour, baking soda, baking powder and salt in a small mixing bowl. Set aside.
  4. In a separate mixing bowl, add mashed bananas, sugar, egg, vanilla and water and mix well.
  5. Add flour to banana mixture and mix just until combined.
  6. Spoon a small amount into the pan. A very small amount. Fill the bunny cavities about ⅓ full. Use the tip of the spoon to spread the batter into the ears of the bunny.
  7. Bake for 8-10 minutes or until golden brown and toothpick inserted into the center comes out clean.
  8. Cool for 5 minutes before popping out of the pan and continuing to cool on a cooling rack.
